David Jones
General Manager

David is responsible for all food and drink served within the University. Trained as a chef, he started his career within the Hotel sector, in London, moving into the Contract Catering market in 1998. David moved into the University Sector in 2004 with City University, London and commenced at the University of Hertfordshire in 2006. David has a passion for all fresh food, preferring simple, well cooked dishes over elaborate complicated food.

Sophia Daniel
Deputy Catering Manager

Sophia is responsible for ensuring that the quality, professionalism and sustainability in all of FoodHertfordshire Restaurants, Cafés, Hospitality and delivered services is maintained. Sophia joined in 2007 having previously managed the catering and hospitality services with several high ranking Central London Universities. Prior to this she was within the Operational Management of a national chain of award winning restaurants.

Leigh Bradford
Hospitality Manager

Leigh has joined from a small independent catering contractor where he was responsible for looking after contracts for EMI including Abbey Road Studios. He gained his University experiences through managing the diverse hospitality department for UCL joining them from Roux Fine Dining where he looked after several Blue Chip companies in the city.

Leigh currently looks after the de Havilland Restaurant and all delivered services across all campuses.

Ruby Paintsil
Food Development Manager

Joining the University in July 2009, Ruby brings over 15 years of catering experience to FoodHertfordshire. Graduating from Thames Valley University with a BA Honours in International Culinary Art, Ruby’s previous jobs have included Head Chef at the Sanctuary Spa in Covent Garden and Head Chef of Hospitality and Events at the BBC. Ruby is located in the Forum Restaurant where she has been a fundamental part of its launch through the development of new diverse lunch menus, operational procedures as well as the coordination of new hospitality menus.
